This is a Tvonderfully bright and fresh jelly. ?t is also slightly zvobbly, so ifyou zuant to turn your jelly out from its mould use about 3Apt of mixed juices. A vegetarian version may be made by using an agar gelling agent available from health food shops.
Mix the apple and apricot juices together. Put about one third of the mbcture into a bowl.

Evenly sprinkle in the gelatine and gently heat över a pan of hot water until ali the gelatine has dissolved. Slowly add the remaining fruit juice while stirring, (do not add the gelatine mbcture to the fruit juice). Cover and chill until set. Serve decorated with the pulped passion fruit.

1 sachet or 3 tsp powdered gelatine.
1 passion fruit, pulped (optional)

This recipe can be easily adapted for use with other soft fruits, such as raspberries or blueberries.
450g (llb) fresh stravvberries 2 tsp clear honey (optional) juice of 1 large orange.

Blend the ingredients together in a food processor until smooth. Pour into a bowl or Container and plWeight Loss in the freezing compartment of the fridge (or in the freezer) for an hour.
Remove and allow the mbcture to thaw a little, if neces sary, then beat well with a metal spoon to break up any ice crystals and return the sorbet to the freezer for at least 5 hours. Allow to sof ten to room temperature for half an hour before serving.
