Coleslaw with Caraway Dressing

This salad adds the sour taste to Pitta’s diet. Rather than being eaten by itself, it should be served as part of a balanced meal that includes other Pitta-reducing dishes. Although the sour tastes of caraway, sour cream, and yogurt in the dressing are good additions to Vata’s diet, the cabbage makes this salad a side dish to be eaten in moderation by Vata. Kapha would infrequently eat coleslaw.
Makes 4 to 6 servings
i teaspoon caraway seeds 1/4 cup sour cream 1/2 cup plain yogurt
1 teaspoon sugar
1/2 teaspoon fresh lemon juice or vinegar 1/2 medium head cabbage, finely shredded
In a small heavy pan toast the caraway seeds over a low flame. Stir constandy until light brown. Remove from the heat and crush the seeds with a mortar and pestle or in a spice grinder. Whisk the sour cream, the yogurt, and the sugar together in a small bowl. Add the caraway and lemon juice or vinegar. Then toss thoroughly with the shredded cabbage. Cover and chill for at least an hour before serving.
