EGGS ON SPINACH SAUTE

6 servings

12 eggs, 1 kg. spinach, 2 medium size onions, 6 tablespoons margarine,

1 teaspoon salt, 7/2 teaspoon pepper

Remove the roots of the spinach. Cut each stem into two. Wash them well.

Scrambled eggs with vegetables

Boil 2 It. of water with some salt. Add the spinach and cook them for 10 minutes.

Drain and chop them. Melt the margarine. Brown chopped onions. Add the spinach and saute for 10 minutes. Sprinkle with salt and pepper. Arrange them in a flat pan. Make 12 hollows and break the eggs into each one. Sprinkle with salt. Cover and cook on medium heat for 3-4 minutes, until the egg whites are cooked. Serve at once.
