Recipe for Healtly Hair and Skin
Fruit and Nut Coleslaw
Prepare as for Everyday Coleslaw- but add 75 g/3 oz/ % cup mixed peanuts and raisins and ‘/ bunch chopped spring onions (scallions) instead of the grated onion.
1/2small firm white or Savoy cabbage 5 or 6 spring onions (scallions), chopped
227/8 oz/1 small can pineapple in natural juice, drained and diced 75 g/3 oz/ 1 cup seedless (pitless) raisins
150 ml/1/2pt/2 cup plain yoghurt
30ml/2 tbsp mayonnaise
Salt and freshly ground black pepper
Mix the cabbage, onions, pineapple and raisins in a salad bowl. Blend the yoghurt and mayonnaise with a little salt and pepper. Pour over and toss well.
