Brazil Nut Bounty

SERVES 6 75 g/3 oz/ 3/ cup pasta shells 75 g/3 oz/1/2 cup brazil nuts, coarsely chopped 200 g/7 oz/1/2 small can Mexican sweetcorn (corn with bell peppers)

1 large green eating (dessert) apple, unpeeled and diced 1 red (bell) pepper, diced

1 garlic clove, crushed

150 ml/1/2 pt/2 cup creme fraiche 15 ml/1 tbsp lemon juice Salt and freshly ground black pepper

5 ml/1 tsp caster (superfine) sugar 15 ml/1 tbsp chopped tarragon Tarragon sprig

Cook the pasta according to the packet directions. Drain, rinse with cold water and drain again. Place in a salad bowl with the nuts, com, apple and red pepper. Blend together the remaining ingredients except the tarragon and pour over. Toss gently and garnish with a tarragon sprig before serving.
