LIMA BEANS AND ONION CASSEROLE
4 tablespoons butter 1 teaspoon salt
18 small white onions, peeled 1 teaspoon white pepper
1 tablespoon flour 2 cup» shelled fresh lima
1 cup dry white wine beans, or 1 package
1 bay leaf frozen beans, thawed
1 teaspoon thyme.
Melt the butter in a casserole; sauté the onions until delicately browned. Stir in the flour and add the wine, bay
leaf, thyme, salt, and pepper. Cover, and cook over low heat 15 minutes. Mix in the lima beans; cover, and cook over low heat 15 minutes, or until beans are tender.

Shake the casserole occasionally to prevent burning. Taste for seasoning.
