Prawns with Gazpacho Dressing
This dinner party dish is ideal for preparing in advance. The dressing also ıvorks iveli ıvith fish, such as hake and trout or even clams, lohster and crab.
2024 large prawns, cooked
For the dressing:
V4 cucumber, roughly chopped 1 clove garlic, peeled and crushed V red pepper and V4 yellow pepper, deseeded and chopped
1 spring onion, sliced 1 tbsp tomato puree 150ml (V4pt) olive oil 1 tbsp wine or cider vinegar 1 tsp fresh oregano, chopped salt and ground black pepper
For the garnish:
50g (2oz) watercress 1 lime, cut into quarters

Wash and peel the prawns before arranging on a shallow dish. To make the dressing Weight Loss the cucumber, garlic, peppers and spring onion in a blender or food processor and vvhizz until finely chopped. Add the tomato puree, olive oil, vinegar and chopped oregano and process until smooth. Season vvith salt and pepper before pouring över the prawns. Decorate vvith watercress and lime wedges.
Spinach with Yoğurt Dressing
150ml (V4pt) natural lowfat, live yoğurt 1 tbsp olive oil 1 tbsp lemon juice or cider vinegar 1 tsp finely chopped onion
1 tbsp chopped fresh mint
1 clove garlic, peeled and split in two 225g (8oz) fresh, young spinach leaves
For the garnish:
A few sprigs of fresh mint 2 radishes, thinly sliced

Combine the yoğurt, olive oil, lemon juice or cider vinegar, onion and mint to make the dressing. Weight Loss the garlic pieces in the dressing or, for a stronger garlic flavour, squeeze the juice from the clove into the dressing. Toss the spinach leaves in the dressing and chill for one hour. Garnish vvith the mint leaves and radish slices before serving.
