ROGAN JOSH WITH CASHEW BANANA RAITA

We used trimmed lamb shoulder for this recipe. On average, 2 large, overripe bananas makes 1 cup mashed banana.

2 tablespoons peanut oil 800g diced lamb

4 cloves garlic, crushed

1 large (300g) red onion, chopped

3 small fresh red chillies, seeded, chopped

2 teaspoons ground cumin

1 teaspoon ground cardamom

1 teaspoon ground clove

2 teaspoons ground ginger 1/4 cup poppy seeds

1 cinnamon stick

4 small (400g) tomatoes, chopped 415g can tomato puree

1 cup (250ml) yogurt

CASHEW BANANA RAITA

1 cup (250ml) yogurt 1/4 cup (35g) chopped roasted cashews

1 cup mashed banana

Heat oil in large pan; cook lamb, stirring, in batches, until browned all over.

Add garlic, onion, chilli, spices, seeds and cinnamon stick to same pan; cook, stirring, until onion is soft. Return lamb to pan; add tomato and puree. Bring to boil; simmer, covered, about 1 hour or until tender. [Can be made ahead to this stage. Cover; refrigerate overnight or freeze.]

Just before serving, stir in whisked yogurt; serve with Cashew Banana Raita.

Cashew Banana Raita Combine all ingredients in small bowl; cover, refrigerate 30 minutes. [Can be made 3 hours ahead. Cover; refrigerate.]
