CHICKEN RISSOLES

1 lb cold cooked chicken or turkey
2 sprigs parsley
2 butter A. pinch of thyme
2 flour Olive oil for frying
2 white cheese Salt and pepper
1 egg “fa

Mince the cold chicken quite fine and season with a little salt and pepper, thyme and finely chopped parsley. Make a very stiff roux with the butter and flour, add the cheese and a very little milk and then beat in the egg and allow it to cool a little. Now mix in the chicken and beat it until you have a dough that can be shaped into little balls about the size of a small egg. Fry the balls in shallow hot oil until they are golden all over.
