Toasted Coconut Condiment

Serve a small dish of coconut plain or toasted so it can be sprinkled over some favorite curry on the dinner plate. If Toasted Coconut is served as a condiment, do not serve Coconut Chutney as well. A little of the sweet, heavy, and oily properties of coconut go a long way. They are good for Vata and Pitta and increase Kapha.

Makes about 1/2 cup
1 tablespoon ghee
1/2 to 1/2 cup flaked coconut
1/4 teaspoon crumbled saffron (optional)
Heat the ghee in a small pan over low heat.

Toss in the coconut and the saffron. Stir frequendy until the coconut is just brown on the tips. Put in a serving dish immediately.
